Easy Banana Cake With Homemade Cream Cheese Frosting: Using a Boxed Cake Mix

My husband had been asking for a banana cake, so I decided to take a shortcut by using a boxed cake mix. I usually make this cake the homemade way but I only had a few minutes to mix it together, so I thought why not give the boxed mix a try. You will need the following ingredients:

Banana Cake Recipe:

1 box of white cake mix

3 eggs

4 tablespoons of butter, melted

3 ripe bananas, mashed

1 cup of milk

Preheat the oven to 350 degrees.

Mix together all the ingredients in a bowl and place in a 13 x 9 inch pan. Bake for 25-30 minutes.

Take the cake out of the oven and let cool completely.

Cream Cheese IcingPhoto bySheree

Cream Cheese Icing Recipe:

8 oz of cream cheese, softened at room temperature

1/2 cup butter, softened at room temperature

3 1/2 cups, or one pound box, of powdered sugar

1 teaspoon of vanilla

Cream together the butter and cream cheese using a mixer and beat until smooth. Slowly add the powdered sugar and beat on low until it is mixed well then add the vanilla and mix for about 2 minutes making sure the frosting is smooth and fluffy.

Ice the cooled cake with the frosting. Enjoy!

Store this cake covered in the refrigerator.

Note: You could make this cake using yellow, white, or even the french vanilla cake mix as it would turn out just as good.

My family loved this new version of this banana cake and they could hardly tell that I had used the cake mix versus the homemade version.
