Slow Cooker Beef Stew

This slow cooker beef stew is one of my family’s favorite slow cooker recipes. I make this often in the cooler months as this is a wholesome meal to enjoy on those cool days. You will need the following ingredients:

Recipe:

1 pound of beef stew meat

3 carrots, sliced

5 – 6 potatoes, cut into bite sizes

2 ribs of celery, diced

1 onions diced

2 cloves of garlic

4 cups of beef broth

4 tablespoons of butter

3 tablespoons of cornstarch

salt and pepper to taste

Season the beef stew meat with salt and pepper and add it to the slow cooker.

Add the celery, carrots, onions, potatoes, garlic and beef broth and let this cook on low for 6 – 8 hours or on high for 3 -6 hours. The beef stew is done when the vegetables are fork tender and the beef stew meat falls apart.

When the stew is done add 1/2 cup of cold water to a small bowl and add the cornstarch and stir this together until the corn starch dissolves. Pour this into the beef stew and let it continue cooking until it thickens up. It should take about 10 minutes.

Spoon the beef stew out into bowls and serve. Enjoy!

Note: You can add your favorite herbs to this recipe including thyme, rosemary, bay leaves, parsley and others. Some green peas would be good too.

I like to serve my beef stew over sandwich bread as this is how I ate it growing up but some warm cornbread or rolls would also be delicious.
