My family loves this batter recipe that was handed down to me from my dad. He liked to make his in a 9-inch cake pan or an iron skillet, but I enjoy making mine in those large muffin tins. This recipe is so light and fluffy and really simple to make. You will need the following ingredients:

Recipe:
1 cup of self rising flour
1/2 cup of whole milk, maybe a tad more
4 tablespoons of butter
Preheat the oven to 400 degrees.

Melt the butter in a medium bowl and then add about 3/4 of a tablespoon to 4 muffin cups.
You will have some butter left over so use that in the batter.

Add the flour and the milk to the bowl with the butter and stir this up until it is well combined. Tip: If you want a thinner batter just add a little more milk.

Divide the batter evenly into the muffin cups that has the melted butter in them and place this in the oven.

Bake for 15 – 20 minutes, or until the top is golden brown and the muffins are cooked through.

Remove the batter bread muffins from the muffin pan and serve. Enjoy!
Note: These batter bread muffins are just a really simple way to make some bread that tastes a lot like homemade biscuits, without the rolling. You can just mix the batter up and pour it into a muffin tin or a cake pan and bake it like you would cornbread.
I like to serve this bread with a side of jelly and some scrambled eggs, sausage or bacon.
