This taco casserole is such a simple and delicious recipe to make, and it comes together in about 30 minutes. You will need the following ingredients:

Recipe:
1 pound of ground beef
1 tablespoon of oil (if you use lean beef you can leave this out)
1/2 of a onion, diced
1/2 of a bell pepper, diced
1 jalapeno, diced finely
1 clove of garlic, minced
1 cup of corn
1 package of taco seasoning
1/2 cup of water
1 can of green chilis
1 can of chili, pinto or black beans
2 cups of colby jack cheese, shredded
2 – 3 cups of tortilla chips, crumbled
toppings: avocado, salsa, pico de gallo, sour cream
Preheat the oven to 350 degrees.

In a large oven safe skillet cook the ground beef, onions, and peppers until the beef is cooked through.
Add the garlic, salt and pepper and cook this for another minute.

Stir in the green chilis, beans, taco seasoning, water, and corn and stir this together.

Cook this mixture until it has heated through.

Turn off the heat and sprinkle the cheese evenly over the top of the casserole mixture.
Add the crumbled tortilla chips to the top and bake for 15 minutes, or until the casserole is bubbly. I used half plain tortilla and half nacho cheese tortillas.

Remove the casserole from the oven and let it sit for about 10 minutes before serving. Enjoy!

Note: You can add rice to this casserole if you have some on hand and if you want to change the top up some mix up some mexican corn bread batter and pour that over the top.
I like to serve this with a side of avocados and sour cream.
