Southwestern Chicken Salad

This chicken salad was one of my favorite salads at one of our local restaurants but unfortunately the restaurant quit selling it so I decided to see if I could recreate it. It was pretty simple to do once I found the salad dressing in the store that the restaurant used. You will need the following ingredients:

Recipe:

1/2 pound of grilled chicken breast

1/4 of a onion

1 head of romaine lettuce

1 bag of baby lettuce

1 tomato

6 slices of cooked bacon, diced

1 cup of shredded cheese

2 avocados

1 bottle of southwest salad dressing

Wash and cut the lettuce up into bite size pieces and lay it on the bottom of the plate.

Wash and dice the tomato into small pieces.

Slice the onion into thin slices. Tip: I use a vidalia onion as they are not too strong and they are really sweet most of the time.

Slice or dice the cooked chicken breast into thin slices or you can cube it if that is what you prefer.

Slice or dice the avocados into bite size pieces.

I like to serve this salad by placing the lettuce on the bottom, then on one corner of the plate I add the tomatoes, and then I add the avocados to the other two corners.

Then I lay the chicken breast down the center of the lettuce and I add the cheese on one side and then the bacon. On the other side I add the sliced onions. You can serve this salad anyway you would like though.

I place the salad dressing on the side so that we can add as much or as little as we like. Enjoy!

Note: You can use any type of precooked chicken you prefer. I use chicken breast I have marinated and grilled.
