Loaded Potato Soup

Have you ever just wanted some easy comforting potato soup and didn’t want to go out to a restaurant? Or, like me needed an easy supper that was both filling and quick to make. After trying several potato soup recipes, I started putting my ingredient list together and tweaking it until I got it just right for me and my family. This is what I came up with. You will need the following ingredients:

Recipe:

4 cups of water

1 tablespoon of chicken bouillon granules

5 – 6 medium potatoes, cubed

1/2 of a medium sweet onion diced

1/3 cup of flour

1 1/2 cups of shredded cheddar cheese

1 cup of half and half or milk

3 tablespoons of butter

salt and pepper to taste

dash of cayenne pepper for a little heat

Garnishes: Bacon bits, green onions, and cheddar cheese

Melt the butter in a dutch oven. Add onions and cook until clear. Add the flour and cook for 3 minutes being careful not to burn this.

Add the cubed potatoes, garlic, salt, and pepper, and cook for 3 minutes. Next, add the water and chicken granules and cook the potatoes until they are soft.

Pour in the half and half, or milk, and then add the cheddar cheese. Stir well and simmer for 5 – 10 minutes. Sprinkle a dash of cayenne and serve. Enjoy!

Note: I serve this with all the garnishes on the side so everyone can fix their soup to their preferences. You can use any type of cheese that you like and leave the cayenne pepper out if you don’t like it just a little warm.

I like to serve this with my 1 hour homemade yeast roll recipe, linked below and you have a warm and comforting meal. If you have leftovers, just place them in the refrigerator and heat them up and they are just as good as the first day.
