Apple Streusel Bread

This is one of my favorite breads to make and it is really simple. I love using honey crisp apples in this recipe, but you can substitute for your favorite apple variety to cook with. You will need the following ingredients:

Recipe:

1/3 cup of brown sugar

2 teaspoons of ground cinnamon

2/3 cup of sugar plus an additional 2 tablespoons of sugar

1 stick of butter, softened

2 teaspoons of vanilla

2 apples

1 1/2 cups of all purpose flour or bread flour

2 teaspoons of baking powder

2 eggs

Preheat the oven to 350 degrees.

In a small bowl add 1 teaspoon of cinnamon and the brown sugar and mix together until it is well combined.

Wash and peel the apples and dice them into small pieces. Add the apples to a medium bowl and add 1 teaspoon of cinnamon and 2 tablespoons of sugar and stir, making sure to coat the apples evenly.

In a large bowl combine the butter and sugar and mix these together until they are light and fluffy. Add the eggs one at a time mixing between each one.

Add the flour and baking powder and mix until it just comes together. Add the vanilla and mix again.

Spray a loaf pan with non-stick cooking spray and then add half of the cake batter to it.

Then add 1/2 of the apples and then sprinkle the apples with half of the brown sugar and cinnamon mixture.

Take a butter knife and swirl this around and then repeat this again using all the ingredients.

Bake for 55 – 65 minutes or until a toothpick in the center comes out clean. Remove the bread from the oven and let sit for 5 minutes. Then turn the bread out onto a wire cooling rack and let cool. Enjoy!

Note: You can add a homemade glaze using powdered sugar and milk if you wish or you can just leave it as it is.

I like to serve this bread as a treat for breakfast. It is especially good warmed up.
