Apple and Pecan Salad with Grilled Chicken

I made this salad recipe up tonight for dinner after I had come back in from grocery shopping. I saw some delicious looking apple vinaigrette salad dressing and fresh blueberries and I immediately started putting a recipe together in my head. You will need the following ingredients:

Recipe:

1 package of baby greens, or your favorite lettuce

1 bundle of green onions, diced

1 apple, sliced thinly

1 package of candied pecans and blueberries

1 bottle of apple vinaigrette

1 small package of blueberries

1 lb of chicken breast

salt and pepper to taste

Trim and slice the chicken into small cutlets. I cut mine in half again, making smaller pieces.

Season the chicken breast with salt and pepper and place the chicken on the grill and cook it until it reaches an internal temperature of 165 degrees. Let the chicken cool for about 5 minutes so it doesn’t wilt the lettuce.

Wash and place the lettuce onto a large plate or platter.

Add the apples, blueberries and diced onions to the top of the bed of lettuce and then add the pecan and dried blueberries.

Slice the chicken into thin slices and place it in the center of the salad. Add the salad dressing and serve. Enjoy!

Note: You can use cheese on this salad if you wish to but I thought it was great just as it was.

I served this to my family on large individual plates so that everyone could have as much of the toppings as they wanted. It was a hit. I can truly say this is one of the best salads I have eaten in a long time.
