Old Fashioned Strawberry Shortcake

This is a recipe I like to make as it is a light and refreshing dessert to have. My family loves this shortcake whenever strawberries are in season, and it is a great way to use some of the fresh ones coming in. Here are the ingredients you will need for this:

Shortcake Biscuits

2 1/4 cup of self rising flour (saving 1/4 cup out for later)

4 tablespoons of butter

1 cup of buttermilk

1/3 cup of sugar

Strawberries In Syrup

1 quart of strawberries

1/3 cup of sugar

Whipped Cream

1 pint of whipping cream

Preheat oven to 375 degrees.

Add the following ingredients to a medium bowl: Using a cheese grater, grate the butter into small pieces and add the 2 cups of flour, sugar and buttermilk. Mix well to combine. Sprinkle the remaining 1/4 cup of flour over the mixture and put some on your hands and pat out the shortcakes into about 4 – 8 shortcakes. Put them into the oven and bake for about 15- 20 minutes, or until golden brown.

In the meantime, wash and slice the strawberries and put them into a bowl with the 1/3 cup of sugar and let sit. This will create a sugary syrup.

In a mixer, place about 1 cup of whipping cream and mix on high until whipped cream is formed.

When the shortcakes are done let them cool a few minutes and then assemble them by cutting the shortcakes open and adding the strawberries, syrup and whipped cream. These are best served immeditaly after assembling. Enjoy!

Note: You can just cut the butter up into small pieces instead of grating it on the cheese grater. Also, you can certainly use the whipped cream that comes in a can instead of making it homemade. I don’t add additional sugar while making the whipped cream as I believe it already has plenty of sugar. Please adjust the sugar to your liking on the shortbreads and the strawberries.
