This recipe is just like the Longhorn Wild West Shrimp Appetizer served at their famous restaurant, but this recipe uses chicken, and it is delicious. I am not a fan of shrimp but I loved this recipe idea, so I set out to figure out a recipe using homemade chicken bites and I have to say it is really close to the real thing. You will need the following ingredients to make this:

Recipe:
1 pound chicken breast, cut into bite size pieces
3/4 cup vegetable shortening
1/2 cup of buttermilk
1 cup of flour
salt and pepper to taste
longhorn prairie seasoning
4 tablespoons of butter
1/2 jar of cherry peppers, mild or hot
1/2 jar of peperoncini peppers, mild or hot
Start by placing the chicken bites into the buttermilk.

Preheat a skillet to medium heat and add the vegetable shortening. When the oil is hot, add the chicken bites to the flour and coat on all sides. Season both sides with salt and pepper and a little longhorn seasoning.
Place the coated chicken bites into the hot oil, very carefully, and cook about 5 minutes on each side or until the chicken is done. You may have to do this in batches.
Place the cooked chicken bites on a paper towel to drain.

In the meantime, in another medium skillet place the butter, and 1/2 cup of the brine from the pepper jar into a medium skillet and cook on medium low until the butter melts. Seed the peppers and cut up into bite size pieces and add to this mixture. Cook for about 5 minutes.
Remove from heat and place the chicken nuggets into this pepper mixture and stir to coat the chicken nuggets. Add 1/2 -1 teaspoon of the longhorn prairie seasoning to the chicken. Enjoy!
