Easy Loaded Potato Skin Recipe

Have you ever wanted some loaded potato skins but just didn’t want to take the 2 hours to make them? Well, do have a recipe for you! I used to make these time-consuming potato skins the old-fashioned way but I got to thinking how I could make these easier. This is what I came up with. You will need the following ingredients:

Recipe:

2 medium size russet potatoes, washed

4 strips of bacon, diced and cooked until crisp (you can use precooked bacon bits)

2 green onions, sliced thin

1/2 cup colby jack cheese, shredded

2 tablespoons of melted butter

salt and pepper to taste

Sour cream as a garnish, optional

Preheat your oven to 400 degrees.

Wash and cut your potatoes into about 1/4 inch thick circles. Spray a sheet pan with oil. Place the potatoes on a sheet pan and take a fork and put some holes in each circle.

Next brush the melted butter on each potato circle. Add salt and pepper and place them in the oven. Bake for 10 minutes.

Take the potatoes out of the oven and turn the potatoes over and brush the rest of the butter on this side and season again with the salt and pepper. Place back in the oven and bake for 5 to seven minutes or until the potatoes are cooked through.

Remove the potatoes from the oven and add cheese and bacon pieces and place the potatoes back into the oven and cook until the cheese is melted. Take the potatoes out of the oven and sprinkle the green onions on top.

Note: You can use any variety of potatoes that you like to make this recipe.

I like to serve these as a side beside chicken, steak, or even by themselves as an appetizer. Garnish with a little sour cream and enjoy!
